The best fish tacos I've had were from Tacofino. From the original truck in Tofino on Vancouver Island, Canada. This is pretty much exactly how I do them today.

Fish taco from Tacofino in Vancouver. The original truck was a lot better I'm sorry to say. I liked their "sushi taco" variation though!

How I make them

This is how I make them (layer by layer):

  1. Small taco wrap. Fried without oil on fairly hot pan.
  2. Kewpie mayo + chili sauce (sri racha normally). Pickle'Naise works too.
  3. Super-fine shredded cabbage (white or red).
  4. Deep fried fish bits (beer batter + panko). Air fryer and shallow fry works too. Or just fried fish with dry or wet seasoning.
  5. Pico de gallo. This is essential.
  6. Squeeze of lime juice at the end.

Lunch. A bit lazy pico-de-gallo, smaller pieces are better.

Adding guacamole and mango is always nice, but I normally don't.

Less cabbage, more guac

A bit of mango goes well with it, some would say it's essential.

Lettuce works, cabbage is better. Guac makes up for it.

Variations

It doesn't have to be deep fried battered with panko!

Dry rub fish tacos, might be with tuna even. Doesn't have to be breaded and deep fried every time.

Wet rub, probably some form of chili paste. Anything works.

Fish taco from Costa Rica. I think under all that cabbage is octopus that's been massaged for half an hour, then cured, and grilled. I wish I could remember, the chef talked about it for like 45 minutes.

Shallow fry fish tacos on a catamaran (sailsurfroam.com) way out to sea on a trip to Tasmania. You never get sick of em! You do get sick on a sailboat however.
