Pico de gallo

The finer you chop everything the better it tastes. The sharper your knife is the finer you can chop it. ;-)

  • 2 finely chopped tomatoes, seeds removed (either way works, but gets juicy)
  • 1/2 finely chopped red onion (optionally soak in ice cold water for 5 min)
  • 1 tbsp finely chopped pickled jalapenos or 1/2 finely chopped fresh jalapeno or 1/2 finely chopped chili (seeds removed)
  • Lots of finely chopped coriander
  • Salt (less if using pickled jalapenos)
  • Lime juice from 1/2 a lime

Scale as needed. I normally count half a tomato per person, so this is for four people.

Not quite small enough pieces, but you get the idea.

The ingredients I use. Feel free to add mango. Swap out the pickled jalapeno for any chili. Looks like a lot of salt, but probably right.
