Cooking

I'm pescetarian, which means I eat vegetarian + seafood. I live almost exclusively off fish, so I prepare and cook a lot of it! That doesn't mean that I'm any expert, but I have learned a thing or two that could probably be useful.

I'm also a fisherman, so I see the whole process; from the fish leaving the water to it ending up on the dinner table. There is a lot that can be done along the way to get the most out of it.

To ensure the best quality possible I ikejime the fish as soon as it's caught. I fish off a kayak so unfortunately I can't get the fish on ice straight away, but as soon as I'm back I'll cut it up into chunks big enough to fit in the fridge or esky. Only once I'm ready to use the fish I'll fillet off what I need and store the rest back in the fridge.

From day zero up to a week I'll make all kinds of things with the fish. I try to freeze what I'm not going to use as early as possible, but there's a bit of a balancing act as to what you'll use fresh and what gets saved for later.

I eat every part of the fish that I catch - including the bones, skin, and head. Only the guts and gills go in the bin (back to the ocean). It pains me that we throw out so much perfect quality parts of the fish we catch. Hey, no judgement! I understand that people have preferences and ample time, but if I can convert one or two people to make fish stock or start eating the fish collars, that would be a great win!
