Bonito

We have two types of bonito:

• Australian Bonito (Sarda australis)
• Leaping Bonito (Cybiosarda elegans)

Both types are delicious and fun to catch.

I use them for:

• Ceviche
• Sashimi
• Fish tacos
• Stock
• Soups

Others use them for bait and don't like them at all.
